My treasure for today is about food.
I love food, I love trying new recipes and food from different cultures. My daughter Amy and her partner and I went to Finbars: check it out an Irish Pub in Bedford Friday night. I saw an entrĂ©e called Boxty and had no idea what it was. Our waitress enthusiastically described and recommended this satisfying comfort food. I would describe it as a potato pancake with personality.I found this description online from Killarney’s Irish Pub’s website: http://www.killarneyspub.com/
Boxty
This is Ireland’s form of a potato pancake. As in other cultures,
there are many versions of preparing the Boxty. Killarney’s
uses grated potato with grated carrot & green onion for flavor.
It is then cooked on the flat top until cooked through. Once
cooked, you top it with a filling & fold it over.
To keep this information authentic I must share this poem that many sites I visited included as part of the Boxty experience. Keep in mind this is a centuries old recipe as you read it :)
